Apple Panakucken

Melt 1/4 cup butter or margarine in 9x13 pan

Pour over butter:
4 eggs
1-1/2 cup flour (whole wheat or all-purpose)
1-1/2 cup milk (or soy milk)
1/2 teaspoon salt

Peel and thinly slice 6 apples and spread over batter

Sprinkle on top:
1/2 cup granualted sugar mixed with cinnamon (1 teaspoon or to taste)

Bake 375 degrees for 30 minutes, covering the last 5 to 10 minutes to keep the sides from getting too dark.

A friend passed this on to me, and I know she got it from another friend; I've no idea where the original recipe came from, although I assume it originates from a German community. Panakuchen means "large, thin pancake" (we pronounce it pan'-a-cook-in). I substitute blueberries, peaches, or even strawberries for the apples, but you need to be careful not to use something that is wet (i.e. thaw and drain frozen blueberries well before using them). I sprinkle plain sugar on strawberries without the cinnamon. Enjoy!
