The Fairview Kitchen

I have been working on keeping my weight down, and I’d guess there are a few of my readers who are also working on this. I thought I’d tell you about something I’ve been doing that has been a hit here in my home. Each time I go grocery shopping I buy several items in the fresh vegetable department—small tomatoes, green peppers, small carrots, cauliflower, radishes—whatever looks good. Now this is not always easy here in small town Wisconsin since good winter produce is not always abundant! When I get home I clean the vegetables, cut them up, and place them into a container, which has a grate in the bottom so that I can add water to the bottom without submerging the produce. I pull this out frequently during the day, and before it is time to go shopping, the container has been nearly emptied. It helps me to watch my waistline, and it is healthy for the rest of the family as well.
